Molasses Cookies - So Good!

Perfect with hot cocoa and a Christmas story!

Molasses Cookies

2 cups sugar
1-1/2 cups butter, softened
1/2 cup molasses
2 eggs
4-1/2 cups unbleached flour
3 teaspoons baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground cloves
1 teaspoon ginger
1/2 teaspoon nutmeg

Beat sugar, butter, molasses, and eggs in a large bowl, until light and fluffy. Stir in flour, baking soda, salt, cinnamon, cloves, ginger, and nutmeg Mix until thoroughly combined. Cover and chill in the refrigerator for at least two hours; more is fine if you want to start these the day before you need them.

Preheat oven to 350 degrees. Shape dough into 1-inch balls. Roll each ball in sugar. Place the sugared balls about 2 inches apart on ungreased cookie sheets. Bake at 350 degrees for 8-12 minutes or until firm in the middle. Transfer cookies to a cooling rack. Makes about 10 dozen warm and wonderful cookies.
